Cowboy Caviar Recipe

Quick and yummy cowboy caviar can be served as an appetizer (it's the BEST dip) or even a side dish!

Ingredients

  • 3 Roma tomatoes, seeded and diced
  • cups sweet corn kernals
  • ½ cup red bell pepper finely diced
  • ½ cup green bell pepper finely diced
  • ½ cup yellow bell pepper finely diced
  • ½ cup orange bell pepper finely diced
  • cup red onion finely diced
  • 1 jalapeno pepper finely diced
  • 1 15oz can black beans rinsed and drained

For the Dressing

  • cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lime juice
  • 1 teaspoon granulated sugar
  • 1 glove garlic, finely minced
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder

Instructions

To Make the Dressing

  • In a small bowl, whisk together all of the ingredients for the dressing.  Set aside.
    ⅓ cup olive oil, 2 tablespoons red wine vinegar, 2 tablespoons lime juice, 1 teaspoon granulated sugar, 1 glove garlic, finely minced, ½ teaspoon ground cumin, ½ teaspoon chili powder

To Assemble the Cowboy Caviar

  • In a large bowl, combine all of the chopped vegetables and the black beans. 
    3 Roma tomatoes, seeded and diced, 1½ cups sweet corn kernals, ½ cup red bell pepper, ½ cup green bell pepper, ½ cup yellow bell pepper, ⅓ cup red onion, 1 jalapeno pepper, 1 15oz can black beans, ½ cup orange bell pepper
  • Pour the dressing over the vegetable and bean mixture and toss to coat.
  • To serve as an appetizer, put out alongside tortilla chips.
