Asian-Inspired Pork Kabobs

Ingredients

  • 1 lb pork tenderloin cut into cubes
  • 1 orange bell pepper cut into pieces
  • 1 pint grape tomatoes
  • 1 red onion cut into wedges
  • 1 pineapple cut into large chunks
  • ¼ cup soy sauce
  • ¼ cup hoisin sauce
  • 1 teaspoon chili paste
  • 2 cloves garlic minced
  • 1 teaspoon minced fresh ginger

Instructions

  • Whisk together soy sauce, hoisin sauce, chili paste, garlic and ginger in a small bowl. Reserve ½ of the marinade in a bowl.

  • In another large bowl, combine pork pieces and ½ of marinade. Marinate for at least 15 minutes - overnight is best.

  • Heat the grill to medium heat.
  • Thread pork, bell pepper, onion and pineapple pieces onto skewers. Discard any leftover marinade from the pork.

  • Place skewers on the grill.
  • Grill for 5 minutes. Brush with reserved marinade and turn over. Grill an additional 5 minutes. Brush with reserved marinade and grill for 2­5 additional minutes turning occasionally to prevent burning or until pork is fully cooked.
  • **If using bamboo skewers, soak in water for 30 minutes before using.
