Chocolate Chip No Bake Energy Balls

Amazingly delicious little bites of oats, peanut butter, toasted, coconut, chocolate chips and loads of other healthy ingredients. Your family will love these No Bake Energy Bites!

Equipment

Ingredients

  • 2 cups oats
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flax seeds or wheat germ
  • 1 teaspoon ground cinnamon
  • cup toasted coconut
  • ¼ cup pecans chopped
  • ¼ cup almonds chopped
  • ½ cup mini chocolate chips
  • Heaping ½ cup peanut butter
  • ½ cup honey
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  • In a large mixing bowl, combine the dry ingredients and mix to combine.
  • Add in the peanut or almond butter, honey and vanilla extract. Using a rubber spatula, mix everything together until sticky.
  • Refrigerate 1 hour.
  • Roll into 1-inch balls. Store in the refrigerator in an airtight container for up to 1 week.

Notes

Prep time does not include the time for the energy bites to chill.
Variations for Energy Bites:
  • Mix it up a little by swapping half of the chocolate out. Use ¼ cup of the semi-sweet chocolate chips and a ¼ cup of another flavored chips such as toffee, cinnamon, or white chocolate.
  • If you're not a fan of honey, try using agave nectar to sweeten these energy bites instead.
  • Use almond butter, cashew butter or sunflower seed butter instead of the peanut butter.
  • Swap out the pecans and almond for other nuts such as walnuts or cashews.
⏲️ Storage
These will last in the refrigerator in an airtight container for 1-2 weeks.
Better yet, these no bake energy bites can be frozen in an airtight container for up to 3 months! I like to make a great big batch and freeze them. I take out what I need for lunchboxes the night before.
