Chicken and Potatoes | One Pan Dinner

Ingredients
Boneless Skinless Chicken Thighs
Purple Potatoes
Tomatoes
Corn off the cob
Extra Virgin Olive Oil
Minced Garlic
Salt + Pepper
Instructions
Preheat your oven to 425 degrees
Place aluminum foil on top of a rimmed baking sheet
Cut purple potatoes, tomatoes and corn off the cob and spread out on baking sheet
Place chicken thighs on baking sheet
Drizzle extra virgin olive oil over everything on sheet
Spread garlic on top and sprinkle with salt and pepper
Bake for 20 minutes or until chicken is cooked
Notes
The bag of purple potatoes I got from the food store also had other potatoes mixed in with it, pictured above you can see both kinds of potatoes
