Honey Cinnamon Almonds

A healthy version of sweetly coated almonds

Ingredients

  • 1 cup almonds
  • cup honey
  • 1 Tablespoon cinnamon

Instructions

  • Combine ingredients in a skillet.
  • Cook over medium heat, stirring occasionally, until the honey begins to harden and the almonds stick to the stirring utensil, about 10 minutes.
  • Remove from heat and spread almonds in a single layer on a piece of parchment paper.
  • Cool completely, then break into pieces if necessary.

Notes

These are best eaten the day they are made, otherwise the coating begins to soften and they stick together. If necessary, they can be stored in an airtight container.
