Vanilla Cinnamon Chia Pudding

Ingredients

  • ¾ cup chia seeds
  • 2 cups sweetened vanilla almond milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • cocoa powder raisins or slivered almonds, optional

Instructions

  • In a large bowl, mix all ingredients until well combined
  • Evenly distribute chia mixture throughout four ramekins
  • Place ramekins in the refrigerator, covered, overnight
  • Serve cold with non-dairy whipped topping, non-dairy chocolate or caramel sauce
