Good Morning! It’s Doree here from Top Notch Mom. I hope you’re enjoying your Memorial Day Weekend. Every year around this time I like to come up with a new pasta salad recipe for the summer. Something that’s quick and easy, perfect for any summer BBQ or pool party you plan on hosting or attending. Your friends and family will keep coming back for more if this Tomato Basil Pasta Salad, trust me!
Tomato Basil Pasta Salad
- 1 box large pasta shells
- 1 TBS olive oil
- Garlic - minced
- 1 lb cherry tomatoes - halved
- Pinch of salt
- Pinch of red pepper flakes
- 3 C mozzarella cheese - cubed
- 1 C chopped basil
- 1 large bottle italian dressing - cold
- 1/2 C shredded parmesan cheese
Heat medium sauce pan on medium heat
Add oil, minced garlic, salt, and red pepper flakes. Sauté 2 minutes
Add cherry tomatoes and let cook 8-10 minutes until tomatoes start to soften and break down. (feel free to add additional olive oil if you feel it needs it)
Cook pasta according to directions on box for al dente
Strain and add pasta to tomato mixture
Add chopped basil, italian dressing, parmesan cheese, and mozzarella cheese.
Stir to combine all ingredients and refrigerate 4-6 hours or overnight
