These spice cupcakes and the most delicious cream cheese frosting on top!

Spice Cupcakes with Cream Cheese Frosting and Maple Drizzle - how awesome does that sound? Spice cake is my very favorite and these are just sooo good - and pretty, too. (If I do say so myself!)
While the cupcakes bake, whip up a batch of my Best Cream Cheese Frosting Recipe.
Ingredients
Cupcakes
- spice cake mix
- vanilla instant pudding mix
- applesauce
- vegetable oil
- water
- eggs
- ground cinnamon
- Cream Cheese Frosting
Maple Drizzle
- maple syrup
- optional
Cupcakes
- Preheat oven to 350-degrees Line muffin cups with papers and set aside.
- In a large mixing bowl, combine the cake mix, pudding mix, applesauce, oil, water, eggs, and cinnamon. Beat well - the batter will look thick.
- Use an ice cream scoop, or Large Cookie Scoop to fill each well in the cupcake pan.
- Bake for 18-20 minutes on the center rack until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool for 10 minutes before removing from the pan. Cool completely before frosting.
- Once the cupcakes are cooled, frost with cream cheese icing.
Drizzle
- Using a fork, drizzle a little of the maple syrup over the frosting.
- Decorate with a pecan on top, if desired.
