I love surprising Mr. Juggling Act… it’s pretty easy to do, too. He’s such a sweet and unassuming guy and so easy to please! So the other day the fridge was full of odds and ends and leftovers and I saw the makings of a quick pasta salad. I thought, now here’s a chance to make something tasty just for him (and clean up the fridge, to boot!) See, pasta salad isn’t really a bit hit for me or the kids, so unless we’re headed to a cookout, it’s unlikely he’s going to get any of it! The funny thing is, it’s really simple to make, and doesn’t take anytime at all.
This happened to be what I had on hand, but you could easily play with the “cast of characters” here to get a whole other flavor combination. Substitute feta, zucchini, and olives for the cheddar, cucumber and pepperoni for a Greek-inspired pasta salad. Or swap out the cucumbers and pepperoni for green peppers and salami and the apple cider vinegar with balsamic vinegar for an Italian anti-pasto style pasta salad. The combinations are endless, which is why pasta salad is so easy to make… but I digress… Here’s my quick husband-pleasing recipe:
3 cups cooked gemelli pasta
1 cup cherry tomatoes, halved
1 cup cucumbers, peeled and sliced
1 cup cheddar cheese, cubed
1 cup pepperoni, sliced
1/3 cup apple cider vinegar
1/3 cup olive oil
1 Tbls granulated garlic
2 tsp salt
1 tsp pepper
Cook your gemelli according to the directions on the package, then drain, rinse with cold water, and let it cool. I was luck enough to have some leftover gemelli in the fridge, so I got to skip this step 🙂
While the water boils, prepare the veggies, cheese and pepperoni.
In a mixing bowl, whisk together the vinegar and oil, the season with salad and pepper. Toss with the pasta, veggies, meat and cheese and refrigerated.
And there you have it – a simple recipe. A clean fridge. And a happy husband.
