Over the last two years, Ethan's Cub Scout pack has started to become like family to us. There are so many amazing people devoting time and energy to our boys. It's really an amazing thing to be a part of! To celebrate Thanksgiving and Christmas, there is an annual "Thanksmas" celebration.
All the families contribute to the meal, Santa comes, and it's a really fun afternoon. This year, our family cooked one of the turkeys and made a salad, so I wanted a dessert that was quick and easy that the kids could help me make.
My fudgy chocolate brownie platter was empty in a flash, and for good reason - they are scrumptious! Trust me, if you're looking for a crowd-pleasing decadent dessert, this is the recipe for you!

- Preheat the oven to 350-degrees.
- Spray an 8-inch square baking dish with nonstick spray, and then line it with a piece of parchment paper so that at least two edges are hanging over the sides of the pan. Then spray the parchment with nonstick spray, too, just for good measure!
- Whisk together the dry ingredients in a medium bowl. Set aside.
- In a small pot, melt the butter and chocolate together in a pan set on top of a pot of simmering water.
- Remove from heat.
- Whisk the white and brown sugars into the chocolate butter mixture.
- Next, whisk in the eggs, yolk and vanilla.
- Stir in the flour mixture until well incorporated. You can use a stand mixer or hand mixture if you prefer.
- Finally, fold in the chocolate chips.
- Pour the brownie mixture into your prepared pan and bake for about 25 to 30 minutes until a test comes out clean.
- Remove from the oven and let the brownies rest about 5 minutes in the pan.
- Gently lift the brownies out of the pan using the parchment paper 'handles.' The whole thing will come out as one giant brownie.
- Then, carefully peel the parchment paper off the back of the brownies, and let them cool completely on a wire rack.
- Cut the cooled brownies into pieces.
- Frost with Cream Cheese Icing and decorate as desired.

The kids helped me to frost and decorate the brownies. I love having the kids help in the kitchen for a variety of reasons. Spending time together is wonderful, but you can also teach simple math and science principles along the way. The kids had such a great sense of accomplishment when we were done, too.
⏲️ Storage
You can store your chocolate brownies in an airtight container for about 4-5 days in the refrigerator - if they last that long! (These are my favorite airtight containers.)
