Others, like me, occasionally enjoy many of the dairy-free options that are available today. Almond milk, hemp milk, rice milk, soy milk, coconut milk...the list goes on and on! Because of the multitude of options available, being dairy-free is easier than ever.
This recipe uses pre-sweetened vanilla almond milk which is widely available and delicious. Chia seeds, are little tiny seeds rich in nutrition and packed with healthy fats, protein and fiber. When placed in any liquid, they turn a gelatinous texture which makes this dairy-free pudding mimic its traditional dairy-full pudding friends.
But what if only one person in your house is dairy free? No problem with this delicious dessert. A crowd pleaser for the whole family!
Vanilla Cinnamon Chia Pudding

- ¾ cup chia seeds
- 2 cups sweetened vanilla almond milk
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- cocoa powder raisins or slivered almonds, optional
- In a large bowl, mix all ingredients until well combined
- Evenly distribute chia mixture throughout four ramekins
- Place ramekins in the refrigerator, covered, overnight
- Serve cold with non-dairy whipped topping, non-dairy chocolate or caramel sauce
