If you have never heard of overnight oatmeal, it's basically a shortcut version to making oatmeal by soaking raw oats in soy, almond or cow's milk and sometimes yogurt.
It may seem a little foreign at first, right? Trust me though, because this makes the most scrumptious breakfast. The consistency is similar to traditional oatmeal but creamier and more dense.

Ingredients
- peanut butter - I use creamy, but crunchy works, too
- vanilla yogurt - please note: Greek yogurt is too tangy for this recipe
- soy, almond OR cow's milk
- unsweetened cocoa powder
- quick cooking oats
- pure vanilla extract
- sweetener such as sugar, honey, agave or maple syrup
- pinch of salt - to bring out the chocolate flavor)
- chia seeds - helps to give the oats a pudding-like consistency
I like adding chocolate chips, shredded coconut and additional chia seeds on top just before serving. You can use toasted, sweetened or unsweetened coconut.
How to Make Easy Overnight Oats
- Microwave the peanut butter in a small bowl for 10 seconds. Stir and then microwave for an additional 10 seconds until the peanut butter is super smooth.
- Mix in the vanilla yogurt, milk, cocoa powder, vanilla extract, and your sweetener of choice.
- After that, stir in 2 tablespoons of the chia seeds - reserve the rest for the topping.
- Add the quick cooking oats and just a pinch of salt.
- Stir well to combine all the ingredients.
- Next, transfer the mixture into small containers or jars and cover.
- Refrigerate overnight to allow the oats to soften and the flavors to blend together.
- To serve, top with coconut, chocolate chips and additional chia seeds.
