You’ll be the hit of any party with these babies, trust me!

Bars are a great easy dessert to make for a crowd.  It’s a one-bowl, one pan wonder dessert. My grandmother made the most delicious Chewy Chocolate Chip Cookie Bars for all our family holiday gatherings.  But, I have a confession to make – I’m a cookie dough lover.  It’s one of my favorite forbidden treats.

              What is a cookie dough bar?

              A cookie dough bar is all the best parts of cookie dough, without the raw egg.

              I’ve been spending a lot of time this year perfecting my cookie dough recipes so they are both delicious, and eggless. 

              My recipe for edible Cookie Dough Bars is made with semi-sweet mini chocolate chips and covered with a dark chocolate ganache. Sounds pretty decadent, huh?  It is!

              I’m not sure which part is my favorite, the cookie dough, or the dark chocolate ganache on top!

              Let me tell you a funny story.  The day I made these, my children were clamoring for ‘just one bite.’ I gave them each a small taste and they were in heaven.

              When Mr. Juggling Act came home, Ethan, 7, said, “Daddy, you have to try this! One bite and you’ll be in love!” 

              Out of the mouths of babes! You know it’s good when it gets the approval of both your children and your spouse!

              Here is what you’ll need to make this recipe:

              • unsalted butter
              • light brown sugar
              • pure vanilla extract
              • all-purpose flour
              • sweetened condensed milk
              • mini chocolate chips
              • dark chocolate morsels
              • heavy cream

              What can I substitute sweetened condensed milk?

              Yes, simply mix one cup of evaporated milk with 1-1/4 cups of sugar.

              How do you get butter to room temp fast?

              Room temperature butter will take about 30 minutes sitting on the counter. I don’t recommend microwaving butter to soften it. Instead, cut the butter into 8 tablespoon pieces.

              By the time you have prepared the pan and gathered and measured the rest of your ingredients, the butter should be flexible enough to work with.

              Is raw flour safe?

              While flour doesn’t look like “raw” food, it is and can contain bacteria. Take proper safety precautions by lightly toasting your flour before using it.

              1. Preheat the oven to 350-degrees F.
              2. Line a baking sheet with parchment paper.
              3. Spread the flour out on it in a thin layer.
              4. Bake for 5 minutes.
              5. Remove from the oven and let cool completely before using.

              Not only will this make your flour safe to eat, but it also enhances the flavor by cooking out the ‘raw’ taste.

              How to Make Chocolate Chip Cookie Dough Bars

              1. Cream together the butter and brown sugar.
              2. Add in the vanilla and stir to combine.
              3. Alternate the sweetened condensed milk and flour, stirring until combined.
              4. Mix in the semi-sweet mini chocolate chips.
              5. Press the cookie dough mixture into the lined pan.
              6. Refrigerate for 2-3 hours.

              How to Make Dark Chocolate Ganache

              1. In a small bowl, combine the heavy cream and dark chocolate morsels.
              2. Microwave on low for 30 seconds at a time, stirring in between until melted.
              3. Whisk the chocolate until smooth and then pour it over the top of the cookie dough filling.
              4. Use a spatula to evenly spread the mixture.
              5. Return to the refrigerator to cool for another 1-2 hours.
              6. Remove the bars from the pan by lifting them out with the parchment paper.
              7. Cut bars using a long sharp knife. Store leftovers in the refrigerator.

              Equipment

              Ingredients

              For the cookie dough filling

              • 1/2 cup unsalted butter softened to room temperature
              • 3/4 cup light brown sugar packed
              • 1 teaspoon pure vanilla extract
              • 2 cups all-purpose flour
              • 1 14- ounce can sweetened condensed milk
              • 1-1/2 cups mini chocolate chips

              For the Ganache

              • 1-1/4 cup dark chocolate morsels
              • 1/4 cup heavy cream

              Instructions

              • Line a 9×9 pan with parchment paper (this will make it easy to remove the bars later.)

              For the cookie dough filling

              • Cream together the butter and brown sugar.
              • Add in the vanilla and stir to combine.
              • Alternate the sweetened condense milk and flour, stirring until combined.
              • Mix in the mini chocolate chips.
              • Press the cookie dough mixture into the lined pan.
              • Refrigerate for 2-3 hours.

                Thank you for sharing this recipe. You mention it’s safe to eat since there are no eggs but I have a question regarding the flour. Is it OK to eat plain flour? I would love to try it. Thank you.
