Toffee Monster Cookies

 
Awhile ago, I shared my recipe for Everything Oatmeal Cookies, which are perfect for when you can't decide what kind of cookie you want to make.  I've recently discovered another cookie with the same super power - Monster Cookies!  These cookies are based on Paula Deen's recipe.  It's like if a peanut butter cookie and an oatmeal cookie had babies... and you added M&M's and Milk Chocolate Toffee bits... oh yes, friends, these are scrumptious!  The cookies are soft and chewy, with bits of yummy treats all through them.  So good...

Toffee Monster Cookies

Ingredients:
3 eggs
1 1/4 cups packed light brown sugar
1 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 12-ounce jar creamy peanut butter
1 stick butter, softened
1/2 cup M&M candies
1/2 cup Milk Chocolate Toffee Bits
1/2 cup chocolate chips
2 teaspoons baking soda
4 1/2 cups quick-cooking oatmeal

Directions:

Preheat the oven to 350-degrees and line your cookie sheets with parchment paper. 

In a very large mixing bowl, combine the eggs and sugars, then mix well. Add in the salt, vanilla, peanut butter, and butter until well combined.  Finally, stir in the chocolate chips, M&M's, and Milk Chocolate Toffee bits (you could also add raisins), baking soda, and oatmeal. 
 
Don't be confused, you've read this all right, there is no flour in this cookie.
 
Now roll the cookies into little balls and press to flatten into circles - place them about 2 inches apart onto the prepared cookie sheets.

Bake for 8 to 10 minutes, but take care not overbake them because they will get brittle. Remove them from the over and let them rest for about 3 minutes before transferring to wire racks to cool. When cool, store in large resealable plastic bags.
 
This is a HUGE recipe so I like to bake half and then freeze the other half. Simply roll the leftover dough into a log and wrap in parchment paper. Put the wrapped roll of dough into a gallon-sized plastic bag and store in the freezer for up to a month.  These also work great for bake sales (just make sure you note that they have peanut butter in them).
 
Besides being chewy like an oatmeal cookie, and soft like a peanut butter cookie, these cookies are loaded with chocolate.  The M&M's add some pretty color, and the milk chocolate toffee adds a bit of crunch to the texture - plus I think the toffee bits are a bit unexpected, which is always fun.
