Zucchini Spice Cupcakes with Cream Cheese Frosting


Admittedly I'm a chocolate kind of a girl... but there's a part of me that just loves a spice cake. (It might be my thighs...)  

Who am I kidding?  

ALL of me loves spice cake. 

There's something so tasty about a moist spice cake with a rich cream cheese frosting! (And you can use some of that zucchini from the garden to boot!)

Now I know I've regaled you before with the wonder that is the Cake Mix Doctor but honestly, you've got to check this out - Zucchini Spice Cupcakes that taste like scratch-made, with a little less work.  Here's how it's done, friends:

Zucchini Spice Cupcakes

Ingredients:
1 package yellow cake mix
1 package vanilla instant pudding mix
1 cup sour cream
1/2 cup water
1/4 cup vegetable oil
4 large eggs
1 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
2 cups grated zucchini (about 1 medium)

Directions:
Preheat the oven to 350-degrees and line your cupcake pan with papers.

In a large mixing bowl, combine cake mix, pudding mix, sour cream, water, oil, eggs, spices and salt.  Beat until the batter is smooth (it will be thick).  Fold in the grated zucchini and mix until it's well combined.  Ethan really enjoyed helping me with this... (a bit surprising since there were no chocolate chips to sample along the way!)

Scoop the batter into the cupcake papers and bake until the cake is light brown and springy to the touch - about 28-30 minutes. Remove them from the oven and let them rest for five minutes, then remove the cupcakes from the pan to finish cooling.

Cream Cheese Frosting

Ingredients:
1 (8-ounce) package cream cheese, softened
1/4 cup butter, softened
3 cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon


Directions:
While the cupcakes cool, let the cream cheese and butter come up to room temperate.  Beat the cream cheese and butter with an electric mixer in a bowl until smooth. Add in and beat in the powdered sugar a little at a time until incorporated. Add the vanilla extract and ground cinnamon; beat until fluffy.  I used a sandwich bag with the corner cut off to pie on the frosting.

Cow & Lizard Review

I love connecting with great companies, and sharing my experiences with my readers.  Recently, I received in the mail from Cow & Lizard an adorable 'Big Fat Blonde Baby' and 'The Toothless Wonder Tooth Fairy Doll' made by the North American Bear Company for my children to play with and for me to review.  The items arrived well packaged and are very cute.
Olivia took to the doll and had playing little mommy, rocking the baby, and even dancing with her.  The Big Fat Blonde Baby is appropriately named because she either has a very full diaper, or a chubby bottom!  Either way, Liv enjoyed playing with her for quite some time.

Cow & Lizard has tons of great stuffed dolls - many of different ethnicities - and doll houses, oh  - I just I can't wait to look into more when Olivia is a little older! The other thing I love about Cow & Lizard is that they're offering toys that break with the social norms for gender, like the pink toolbox, a girl pirate doll, and a whole selection of boy dolls.

Ethan and Mr. Juggling Act decided that since The Toothless Wonder is a super hero and has a cape, he should fly... the flying doll got lots of giggles from everyone (yes, even Mr. Juggling Act).  Ethan enjoyed playing with it for a bit, giving him a ride on a dump truck and sailing him through the air.  Honestly, though, he lost interest rather quickly, and since he's not apt to lose a tooth anytime soon, the doll didn't hold his attention for long.  I imagine that when he does lose a tooth, he'll be a big hit.


In addition to lots of plush toys, there's a whole Dr. Seuss section, an array of musical toys, and my favorite, Melissa and Doug toys.  There's something so special about wooden toys, don't you think?  Cow and Lizard has these in great abundance.  I think Ethan would flip over the wooden runs for marbles should Santa happen to deliver it this Christmas (hint, hint to those auntie's with disposable income reading this, heehee!)

And Cow & Lizard has more than just toys -  I literally drool over all the educational stuff and wonderful arts and crafts items. Plus, they have clothing, too.

At first glance, some of the items are a tad on the pricy side, but I truly believe that this is a case where you get what you pay for - beautiful toys that will last as they are handed down to siblings, cousins or friends.

Apple Stamping

My kids love to paint, and with zillions of apples in the house, I thought we'd try stamping out some apple prints.  Olivia still wants to put everything in her mouth, and I didn't want to confuse her by telling her should couldn't eat the paint-covered apple, so she used her fingers.

Ethan and I used apple halves to make the prints, and we used our thumbs to make leaves at the tops and when they were dry... ok, ok, I cheated a teeny bit on one and used a paintbrush (not shown), heehee! Ethan also tried making one using his fist (center), and thought that was pretty fun, too.

When the paint was dry, I cut them with craft scissors to give them a  pretty edge - and now we have some pretty cards to send to far-away aunties and grandparents.

Golden Applesauce & Crockpot Apple Butter

With a half bushel and half peck of apples picked last week, I decided to make some applesauce for the kiddos.  Between my cooking (I often substitute applesauce for oil in my baked goods), and their love of it, we go through applesauce like crazy.  Since I work full time outside the house, I decided to use my crockpot to whip up a batch of applesauce while I was at work.

It wasn't until later that I realized I'd made apple butter not applesauce - here's the definition from Wikipedia:

"Apple butter is a highly concentrated form of apple sauce, produced by long, slow cooking of apples with to a point where the sugar in the apples caramelizes, turning the apple butter a deep brown. The concentration of sugar gives apple butter a much longer shelf life as a preserve than apple sauce."

Who knew?  So today I'm sharing with you how I made both Apple Butter, and Applesauce.


Golden Applesauce
Ingredients:
8 medium apples
1 teaspoon fresh lemon juice
2 teaspoons of cinnamon
1 teaspoon of nutmeg
1/4 cup white sugar

Directions:
Peel and core your apples.  In a large stockpot, bring the water and apples to a boil and cook until tender.  Drain the apples carefully and transfer to a another large pot.  To the apples, add the spices, lemon juice and sugar.  Cook for about 15 minutes on low, stirring often.  Again, you can use a hand blender to puree the apples, like I did, or leave it chunkier.

Crockpot Apple Butter

Ingredients:
 8 medium apples
1 strip of lemon peel 
1 teaspoon fresh lemon juice
2 teaspoons of cinnamon
1 teaspoon of nutmeg
1/4 cup brown sugar

Directions:
Peel and core your apples.  Props to Mr. Juggling Act for all his peeling and coring help!  We left them fairly large since I was going to let these cook all day long.  Using my vegetable peeler, I shaved off a few slices of lemon peel (be careful not to get the white pith, which is bitter).  Sprinkle with cinnamon, and brown sugar, and grate a bit of nutmeg over the top.  Squeeze in a little lemon juice and you're done.  Set your crockpot on low and cook for 6-8 hours.  I used a hand blender to puree the mixture, but you could just give it a stir and serve it on the chunkier side, if you want.

Squash & Apple Bread

Fall is my favorite season - and what better way to celebrate than experimenting with a fruit bread?  Yes, my love for all puree-filled breads is well documented on my recipe page, from Apples to Zucchini, I've got many of them covered - so many that now I'm venturing into dual-puree territory.  

Dun, dun, dunnnn.  Ok, so it's not that dramatic - but it is tasty. 

Oh, and there so many lovely ways to prepare this - you could toss it into a cake pan and top it with a nice oat and brown sugar topping for a delicious crumb cake, or pour into muffin tins for an on-the-go breakfast - or even - dare I say it? Pour into a donut pan and frost with a cream cheese glaze... oh my... whichever variation you choose, here's where to start:

Squash & Apple Bread

Ingredients:
1/2 cup squash puree
1/2 cup applesauce or apple puree
1/4 cup whole wheat flour
1 cup all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 cup sour cream
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 eggs


Directions:
Preheat the oven to 350-degrees. Lightly butter one loaf pan and set aside.

I chose to roast my butternut squash rather than boil it, which adds a bit of flavor and richness, I think.  Peel and cut your squash pieces.  Use a cooking spray to lightly coat a baking sheet.  Spread the squash pieces out, give another quick spritz and a sprinkle of cinnamon.  Cook at 400-degrees until fork tender (about 20-25 minutes depending on the size of your pieces). 

In a medium mixing bowl, whisk together the dry ingredients and spices and set aside.  In a large mixing bowl, beat the egg, then combine the rest of the wet ingredients.  Fold in the dry ingredients until just mixed.  Pour the mixture into the prepared pan and bake for 35-40 minutes.

This makes two loaves of bread, and you can easily freeze one loaf for later. Let the loaves cool completely, wrap the freezer-bound bread with plastic wrap, then a layer of foil.  Label and store for up to three weeks in the freezer.  Thaw on the counter overnight.

Apple Picking & Classic Apple Crisp

Last weekend, we went apple picking at Apple Hill Farm in Concord, NH.  Is there anything more quintessentially fall than apple picking?  The kids and I are all fighting colds, but made the best of it with our runny noses and scratchy throats.  To their credit, the kids were really well behaved and we had an awesome time.

Our outing was actually a birthday party for one of Ethan's classmates - a sweet boy with a shy smile but quick giggle.  We all piled (literally) onto a big wagon, and bumped up a huge hill - or small mountain depending on how you look at it!  From there, the families dispersed to find their favorite varieties of apples.  

The kids had so much fun running up and down the rows of apple trees, plucking apples and exclaiming over the shape and size of each and every single apple.  I was amazed at Olivia's ability to not only pick the apples from the low branches, but to collect and carry four, even five apples in her plump little arms.  Ethan - an apple picking veteran - filled his 1/2 peck bag within a few minutes, then would trot over to put his apples into Daddy's huge 1/2 bushel bag.  

Yes, Mr. Juggling Act had a 1/2 bushel bag... our hosts had generously provided each family with a 1/2 peck bag.  I knew that I wanted to make some double batches of Apple Bread to freeze, my Aunt Daphne's New England Apple Pie, along with some other Fall treats, and that a 1/2 peck just wouldn't cut it. I sent the dutiful and ever-handsome husband into the Farm Stand to procure a larger bag. Clearly, I need to communicate better because by 'bigger bag' I meant, a peck, but to Mr. Juggling Act, that meant "the-biggest-bag-they-have-or-else-my-wife-will-think-I-wasn't-listening-again" bag.  So that's how we ended up with a 1/2 peck and a 1/2 bushel of apples... but I digress...

The views at Apple Hill Farm were stunning, and they have this cool ski lift swing where all the families (and then the kiddos, too) posed for photos.  As we bumped down the hill mountain, the kids all had half eaten apples in their chubby hands and apple juice running down their chins.  Back at the picnic tables, the Birthday Boy was serenaded by his friends while his mom passed out adorable cupcakes she'd decorated like apples, and his dad handed out goodie bags with treats for the kids, and apple crisp mix for the parents. 

These photos are of my crisp made with the mix, which was delicious, by the way.  But for you, dear readers, I'm including a recipe for my favorite Classic Apple Crisp.


Classic Apple Crisp

Ingredients:
4 cups apples, chopped
1/3 cup rolled oats
1/3 cup brown sugar
1 cup all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/2 cup butter

Directions:
Preheat the oven to 375-degrees.  Peel, core and chop the apples into slices.  We picked gala and honey crisp, so that's what we used.  Lightly butter the inside of a baking dish, and dump all the apple slices into the dish. 

In a small mixing bowl, cut the butter into the oats, sugar, flour, salt, and spices until it is a crumb-like consistency.  

Sprinkle the mixture over the top of the apples (I like to tuck a little into the middle of the apple layers, too - YUM!

Bake for 30 minutes until the top is golden brown and the apples are soft.  We like ours warm with ice cream.  

I guess the only thing more perfectly 'Fall' than apple picking is making (and eating!) apple crisp.  I hope you have your own apple picking and eating adventures this Fall with the ones you love!  Stay tuned this month for more delicious Fall recipes with pumpkins, sweet potatoes, and of course, apples!

Sweet Potato Pancakes


It's Saturday, and that means - PANCAKES!  Today I'm sharing my easy sweet potato pancakes.  I made these with a jar of sweet potato baby food, but you could just as easily make it with a simple sweet potato puree.  (By the way, you could swap out the sweet potato for pumpkin in this recipe and it would be equally delicious!)

My kids were none the wiser by my slipping a 'healthy' into their pancakes, and even Ethan - my super picky eater -  gobbled up four pancakes.  This is his record.  The boy LOVES pancakes, and as long as I give him a smattering of mini chocolate chips in his, he'll happily eat them regardless of what nutritious items I might be sneaking into them!

Ingredients:
1/2 cup of whole wheat flour 
1/2 cup of all-purpose flour
1½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1 jar (6oz) Sweet Potato puree
1¼ cups milk
2 tablespoons butter, melted 
1 large egg
1 tablespoon dark brown sugar
1 tablespoons vanilla extract

Directions:
In large bowl, combine flours, baking powder, brown sugar, salt and spices with a whisk and set aside.

In a mixing bowl, combine sweet potato baby food, milk, butter, eggs and sugar and vanilla and mix until smooth. Slowly add dry ingredients to mixing bowl and stir until just combined.
Pour circles of batter onto your greased skillet. Cook on medium heat and flip pancakes when bubbles form on the surface. The pancakes should be a golden brown color.
Serve immediately, or freeze for later (I love freezing pancakes for the kiddos - and they'll keep in there up to about three months... if they last that long!)

While Ethan ate his with mini chocolate chips, and Olivia had hers plain, Mr. Juggling Act and I enjoyed them with a bit of real New Hampshire syrup.  Of course, these would be delicious with my Honey Compound Butter, too... maybe I'll have to whip up another batch of that!

Co-hosting Kit Lit Blog Hop


motherdaughterbookreviews.comAnyone that knows me (online or 'in real life'), knows that I love to read.  My love of reading began as a child, and was encouraged throughout my life by my family, especially my grandmother.  I still have the beautiful hard copy of Little Women she gave me when I was twelve.  The cover is weathered now, and the pages read over and over again.  I can't wait for the day that I can share that with my children (yes, even my son!)

Until, we're content to read the more age appropriate children's books - classics like Guess How Much I Love You, One Fish, Two Fish, Red Fish, Blue Fish, and wonderful new books like Granny's Clan that I've just reviewed earlier today.  I think that reading to your children and instilling in them a love of books is so critical for their development and learning.

BookWorm: Granny's Clan


Granny's Clan: A Tale of Wild Orcas by Sally Hodson is based on actual orca, or killer whale, research.  The book takes readers on a real-life adventure as it combines science with a story of family, friendship, and love among a wild orca clan.

Orca, as Ethan and I have learned, are actually in the dolphin family.  They are smart animals with complex social lives, not unlike ourselves.  This family is led by the matriarch, Granny, who, with the birth of a new baby last month, is now a great, great grandmother!  Just a human grandparents do, Granny babysits, plays, and teachers the littlest members of her family, helping them to learn to communicate, hunt for salmon, and stay clear of dangers.

Ethan and I sat down to read this one night and ended up spending over an hour pouring over every page, talking about orcas, and watching the videos from The Center for Whale Research.  I couldn't get over how fascinated Ethan was to learn about the orcas.  He was enthralled by the videos, and eager to re-read the book after watching them so he could point out some of the things he'd learned along the way.
 
The illustrations, done by Ann Jones, are just beautiful.  She really captures the orcas in a way that reminds me a bit of a family album, lovingly created with pastels.  The prose itself has a sort of lyrical rhythm to it without being too sing-songy or rhyming.  

It really is such a wonderful book and one I highly recommend for children.. It would make a beautiful gift, especially with one of the lovely bookmarks you can print out.

One of the things I adore about books from Dawn Publications, is all of the Downloadable Activity resources that they make available on their website. This makes it so easy for teachers, homeschoolers, and parents alike to take full advantage of the book as a teaching tool.  In fact, this book has a 58-page activity guide with enough curriculum to fill a whole unit on orcas!

Dr. Sally Hodson loves to tell stories and hopes hopes to inspire people to care for our planet and the animals who share it.  She earned her doctoral degree at the University of Colorado, with a focus on environmental education, ecology and animal behavior. Sally is an educator through and through having taught elementary, secondary and special needs students, as well as teachers. Cheddar Bacon Muffins

Looking for a savory muffin for your next brunch, or side for a hearty stew or chilli? Look no further than these amazing Cheddar Bacon Muffins.  What's not to love - Cheddar? Yum! Bacon? Yum!  Serve them with a little garlic chive compound butter and they are so, so yummy!

Cheddar Bacon Muffins

Ingredients:
1 cup all purpose flour
1/2 cup whole wheat flour
1 tablespoon baking powder
1/2 tablespoon sugar
1 cup shredded sharp cheddar cheese
1 package of bacon (1lb) cooked and crumbled into pieces
1 cup milk
1 egg
1/4 cup applesauce


Directions:
Preheat oven to 375-degrees.  You'll definitely want to use muffin liners here because these babies will stick to your pan and there's  nothing to love about that! 

Stir together the dry ingredients and mix in the cheese and bacon.  I used Kraft's Triple Cheddar Blend - Oh gosh, so good - but you could use any cheddar you have.

Beat egg, milk, and applesauce together then mix in with the dry ingredients until just combined.

So, two things here, it will seem like the mixture is really thick and like there's not enough batter, and, it's OK if there are lumps.  The thing is, there's lots of bits of bacon and cheese, so it's really heavy on the mix-ins, but the proportions are right, and given that fact, there will definitely be lumps.  Just don't over mix the batter and all will be well!

Spoon into a paper-lined muffin tin and bake for 15-20 minutes. I recommed you let these cool a bit before eating, since the papers won't stick as much.

All your calories for the day miht be in these, but I'm not going to worry about that - heehee!  I hope you'll enjoy these as much as we have.
