Looking for something to do with the peppers from your garden? Try this simple Red Pepper Relish - I got the idea from SaltTree's post, The Hunt for Red... Pepper Jelly. As soon as I saw it, I knew it would be the perfect little 'just because I love you' gift for my Dad who loves this kind of stuff.
Red Pepper Relish
Ingredients:
4 sweet red bell peppers, seeded and chopped
2 cups apple cider vinegar
2 cups white sugar
Directions:
Wash and dry your peppers. Remove the seeds and chop up the peppers. In a medium saucepan, combined the peppers, apple cider vinegar and salt. Cook the mixture with the lid on,
over medium heat, stirring occasionally until the peppers get soft then
lower to a simmer for a few more minutes.
While the peppers cook, bring water a large canning pot to boil (this takes forever, so start sooner than you think you need to!) and sterilize your jars, lids, and spoons.
Strain the peppers of almost all the juice. Carefully pour the peppers and just a bit of the juice into your jars leaving 1/4" head space. (I made just one quart jar). Secure the lid, then process in the water bath (5 minutes once it comes to a full boil again). Remove the jar to a kitchen towel, and once you hear the 'plink' noise, you're good to go.Download these cute labels for your jars. Store them (or gift them) for up to six months.
